We had so much fun making this delicious and fast recipe at home. We hope that this easy recipe helps you spend more time sitting at the dinner table with your family instead of washing dirty dishes!
1 ¼ lbs. Boneless, skinless chicken breasts or thighs (we used thighs)
4 cups of chopped broccoli
3 medium carrots, peeled and cut into skinny sticks
2 cups of mushrooms, halved if large
1 small red onion, sliced (we accidentally diced our but it came out just as delicious)
½ cup cherry or grape tomatoes
½ cup balsamic vinegar
⅓ cup olive oil (avocado if you have it handy)
4 minced garlic cloves
3-4 tbsp. Fresh, chopped basil
1 tsp. Fresh thyme
½ tsp. Sea salt
¼ tsp. Pepper
