This recipe is for the autistic kiddos who love mac and cheese, but don't always enjoy the textures of veggies. By blending your veggies in the sauce, you end up with a delicious and nutritious meal!

Veggie Mac and Cheese This recipe is for the autistic kiddos who love mac and cheese, but don't always enjoy the textures of veggies. By blending your veggies in the sauce, you end up with a delicious and nutritious meal! Ingredients:
1/2 head of cauliflower (or more if desired)
1/2 medium sweet potato (or more if desired)
1 cup milk
1 1/2 cup cheddar cheese
2 tbsp butter
1/4 tsp garlic powder
Salt and pepper to taste
1 lb elbow pasta Instructions:
Assist your kiddo in prepping the ingredients. Grate your cheddar cheese and peel your sweet potato. Then, assist your kiddo in chopping the sweet potato and cauliflower.
Heat a large pot of water on medium heat and bring to a boil.
Cook your cauliflower and sweet potato in the pot until fork tender, about 10-12 minutes. Remove your veggies, but do not discard the cooking water.
Transfer your cooked cauliflower and sweet potato into a blender, and add the milk, cheese, butter, and seasonings. Blend your ingredients until smooth.
Bring your cooking water back to a boil and add your elbow pasta, cooking it until desired doneness.
Once the pasta is ready, remove the water and stir in your cheese sauce. Enjoy!Download Now!
