A festive and fun recipe is exactly what the season calls for! This advanced recipe is perfect for your autistic kiddo to practice more advanced fine motor skills, as well as measuring and patience. Dough Ingredients:
3/4 cup milk
1/2 cup sugar
2 1/2 tsp dry yeast
1/2 cup Greek yogurt
1/2 butter
2 eggs
1 tsp vanilla extract
4 1/2 cup flour
1 tsp salt
Filling Ingredients:
1/2 cup butter
1 cup brown sugar
2 tbsp cinnamon
1/2 cup rainbow sprinkles
Frosting Ingredients:
8oz cream cheese
1/4 cup butter
1 1/2 cup powder sugar
1 tsp vanilla extract Instructions:
To make your dough, add warm milk to a small bowl, and mix in 1 tbsp of sugar and dry yeast. Follow the instructions on your yeast packaging to determine how long you should wait before using.
In a large bowl, mix together your flour and salt.
Create a hole in the middle of your flour and pour your milk and yeast mixture, the remainder of the sugar, Greek yogurt, soft butter, eggs, and vanilla extract.
If using a standing mixer, attach a dough hook and mix on low speed for 1 minute. If you’re not using a mixer, use a wooden spoon to combine the ingredients until a loose dough forms. Allow it to sit for 5 minutes.
Mix on low to medium speed for 5 minutes, until the dough pulls away from the sides. If mixing by hand, add flour to a surface and help your kiddo knead the dough for 5 minutes until smooth.
Lightly grease a bowl with either a thin layer of butter or oil, and add your dough to the bowl. Cover it with a kitchen towel and let it rest for 30 minutes.
To make your filling, add butter, brown sugar, and cinnamon to a bowl and mix until well combined. Then lightly fold in your rainbow sprinkles.
Once your dough has finished resting, flour a surface and roll your dough out to a large rectangle, roughly 16x15.
Spread your filling on top of the dough, leaving space on the edges for rolling.
Roll the bottom of your rectangle up to the top to form a log. Then help your kiddo cut the dough into 8 rolls about 2 inches wide, using a knife or unflavored floss.
Lightly grease a 9x13 pan with butter and place your rolls into the pan. Cover and allow them to rest for 30 minutes.
Preheat your oven to 350 degrees.
Once rested, place your pan in the oven for 25 minutes. Then raise the temperature to 375 degrees and bake for 5 minutes. You want the tops of your rolls to be golden.
To make your frosting, add cream cheese and softened butter to a large bowl. Mix until light and fluffy, with a mixture or by hand.
Mix in the vanilla extract and powdered sugar until you have a smooth frosting.
Once your rolls are done baking, remove them from the oven and allow them to cool for 10 minutes.
Spread your frosting on the cinnamon rolls and top with additional rainbow sprinkles!Download Now!
